Echo & Rig Butcher and Steakhouse is acclaimed chef and restaurateur Sam Marvin’s new venture in Las Vegas. It is a new hybrid restaurant and butcher shop experience that transforms the steakhouse and re-imagines it with a menu boasting over 90 items. Echo & Rig delivers a mixology program that invites guests to enjoy creative and fresh ingredient based cocktails and an expansive, modern day butcher shop serving both the restaurant and its guests. Add to that an impressive weekend brunch as well as a selection of fresh pressed juices, small plates, salads, fresh day-boat fish catches and sausages made daily in the Butcher Shop, and it’s immediately apparent that Echo & Rig is breaking the age-old traditions of the steakhouse experience. The Echo & Rig Butcher Shop pays stunning homage to meat and features some of the most acclaimed butchers in the country who will form relationships with you and your family and focus on customer service. Take-home packages come complete with beautifully wrapped meats in their branded crisp blue butcher-paper with twine and wax seal. “It’s a place to stop by on your way out and bring home tomorrow night’s dinner, knowing that you will consume the best meats possible,” says Chef Sam Marvin. Echo & Rig Butcher and Steakhouse opens at 11am Monday-Friday and 9am Saturday-Sunday and closes at 11pm every night. Brunch is available on Saturdays and Sundays from 9am to 3pm, providing a sumptuous menu brimming with diverse selections throughout the day.
